Easy Sheet Pan Fajitas

We shared these Easy Sheet Pan Fajitas with our special sauce about a year ago on our Instagram page, but it’s time that this recipe finds a home on our blog. While it’s nice to just post recipes on Instagram because it’s quick, it’s nice to remember that Instagram or our account could be gone in a matter of seconds. And we want to make sure we have our recipes saved to the blog. It’s also nice for you to come to the blog and with a quick search, find the recipes you are looking for!

These Sheet Pan Fajitas are a crowd favorite. We love fajitas in our house. It’s always a favorite when we eat out. Katie and I make them regularly and our families both love them! We have also made them for a few different cooking clubs, and always get awesome feedback on them. I think people love them because they are simple and you can prep ahead of time, so they make the perfect week night meal!

So let’s chat about the recipe quickly. We use chicken in the recipe, but you could also use steak! Basically, this recipe takes only as long as it takes you to slice your chicken, peppers, and onions. You can do it in the morning and set aside until you’re ready to bake. But you could also prep on the weekend or even weeks in advance and freeze everything!

Just slice, add your oil and spices, bake and you’re set! The last thing I wanted to mention is our special sauce. In my opinion, sauces and topping always take a recipe to the next level! The same is true for these fajitas. You HAVE to give our special sauce a go (don’t let the sriracha scare you – it’s not that spicy). We also love to add avocado, cilantro and sometimes greens! SO good!

Easy Sheet Pan Fajitas

These will quickly become a family favorite!

Ingredients
  

  • 1 lb chicken breasts
  • 1 red pepper
  • 1 green pepper
  • 1 orange/yellow pepper
  • 1 onion
  • 2-3 Tbsp avocado oil
  • 2 Tbsp chili powder
  • 1 Tbsp garlic powder
  • 2 tsp cumin
  • 1 tsp red pepper flakes (optional)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 pkg your favorite tortillas
  • lettuce, sour cream, cheese for toppings

Special Sauce

  • 1/2 cup mayo
  • 1/2 lime (juiced)
  • 2 Tbsp sriracha
  • 1 tsp honey

Instructions
 

  • Preheat the oven to 400 degrees and line a large baking sheet with parchment paper.
  • Cut the pepper and onion into thin strips.
  • Do the same with the chicken.
  • Place everything in a large bowl or bag.
  • Add in oil and spices and mix to combine.
  • Spread evenly on the baking sheet and bake for 20-25 minutes.
  • Top with special sauce (mix all ingredients together) and other toppings!
