This four-ingredient Alfredo takes ten minutes and is the perfect busy weeknight meal, a simple, satisfying dish the whole family will love. It is usually my go-to when I need an easy but delicious side to pair with grilled chicken, steak, or shrimp, plus a roasted or steamed veggie. It is quick, comforting, and it always hits the spot when time is tight and appetites are big.

This version is different from the thick, heavy-cream Alfredo you might picture when thinking of Olive Garden. It’s lighter, and no heavy cream, but still SO good. The magic comes from just a few pantry staples: pasta of your choice, butter, freshly grated Parmesan, and a splash of starchy pasta water to bring everything together, plus salt to taste. Okay, technically five ingredients if you count the pasta water, but that doesn’t count, right?!

I usually reach for this gluten-free pasta, but any variety works beautifully. High-protein pasta is a an option if you want to turn this into a one-bowl meal that packs more of a punch. You also don’t have to stick to the typical fettuccini or spaghetti noodle.. any pasta type works!

Ingredients
  

  • 1 box pasta
  • 1/2 cup finely shredded parmesan
  • 5 Tbsp butter
  • 1/2 cup pasta water
  • salt to taste optional

Instructions
 

  • Start by preparing pasta according to the box.
  • While that’s cooking, shred Parmesan.
  • Once pasta is done, reserve 1/2 cup pasta water and drain the rest.
  • Add butter to the pan over medium low heat and melt.
  • Once melted, add back the pasta, Parmesan, pasta water, and salt.
  • Toss to combine and enjoy immediately!!
