Healthy Blender Pancakes

We make these healthy blender pancakes every Sunday and our entire family eats them all week. The kids eat them for breakfast (usually with a side of fruit) and sometimes for dinner as well! 😉 Who doesn’t love breakfast for dinner?! I will also eat them as a snack when I just need a healthy snack that I can grab and go. They aren’t nearly as good cold, but they work in a pinch. I have also eaten them cold with some natural PB sandwiched between two pancakes. Again, not ideal, but sometimes you just get desperate and refuse to eat junk food.

Why do I love these healthy blender pancakes so much?! Well, for a few reasons. First off, they are delicious – like SO SO delicious. They remind me of french toast because of the vanilla. Reason number two, my kids devour them. These are actually what they consider to be ‘normal’ pancakes and have only had traditional pancakes a handful of times. And every time they do have ‘normal’ pancakes, they always say they like mine better! 🙂 Third reason is because the ingredients are SO MUCH BETTER than bisquick! Let’s Quick compare…

Bisquick: 
Enriched flour bleached (wheat flour, niacin, iron, thiamin mononitrate, riboflavin, folic acid), partially hydrogenated soybean and/or cottonseed oil, leavening (baking soda, sodium aluminum phosphate, monocalcium phosphate), dextrose, salt

These healthy blender pancakes:
Egg whites, cottage cheese, rolled oats, cinnamon, vanilla, and a little bit of sugar that is optional!

So, yes – this is the main reason I love these. I love that I am feeding my kids something they love with nutritious ingredients. I guess this is a common theme with all of our recipes. Our goal is to provide you with easy, fast, and nutrient dense recipes.

Now let’s quick touch base on how incredibly easy these are. Put all the ingredients in a blender, blend, and there you have it… healthy pancake batter. Top with mini chocolate chips if you want! We do! Serve with pure maple syrup or try fresh berries and whipped cream! We make them on this cheap-o griddle. We have had it for years and it works like a charm!

Healthy Protein Blender Pancakes (GF)

Equipment

  • griddle or skillet

Ingredients
  

  • 6 egg whites
  • 1 cup rolled oats
  • 1 cup cottage cheese
  • 1 Tbsp sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • mini chocolate chips to sprinkle on top (optional)

Instructions
 

  • Add all ingredients (expect the mini chocolate chips) to a blender and blend until smooth.
  • Heat a griddle or a non stick skillet and pour 1/4 cup of the batter for each pancake. Sprinkle mini chocolate chips over the batter right away. Flip when they start to bubble and cook until golden brown.
  • Serve with powdered sugar and fresh berries or with peanut butter and maple syrup!
