Healthy Chocolate Chip Pumpkin Muffins

We make a lot of muffins in our household… like, a LOT of muffins. I usually make a batch every weekend so we have snacks and grab n’ go breakfasts in the morning as I am trying to get everyone where they need to be as well as get myself out the door to work. My kiddos LOVE these healthy, chocolate chip pumpkin muffins!

I have tried many pumpkin muffin recipes in my day and this one is bar far my favorite. I have had to make some tweaks along the way, but now it’s now my go-to pumpkin muffin recipe. My kids and husband gobble them up and I feel good about it because they have wholesome ingredients. At some point I want to experiment with a GF version using almond flour. I will let you know when and if I get that perfected!

A few months ago, I switched out my old metal muffin pan with these cute smaller silicone ones and I will never look back! They make slightly smaller muffins (which makes the batch last longer!) and they are so much easier to clean! I love them and the bright colors give them extra cool points! 

FUN FACT: While commonly viewed as a vegetable, pumpkin is scientifically a fruit, as it contains seeds. That said, it’s nutritionally more similar to vegetables than fruits. 

What are the health benefits of consuming pumpkin?

A one cup serving of pumpkin puree supplies 3.4 grams of iron, a mineral that helps keep you from getting sick by supporting a strong immune system. This is about 43 percent of what men need each day, and about 20 percent of what women need. The same serving of pumpkin puree contains 1,906 micrograms of vitamin A, which boosts your immune system, as well as keeps your eyes, bones and teeth healthy. You need between 700 and 900 micrograms of vitamin A each day, and pumpkin is an excellent source. You also get about 15 percent of your daily vitamin E needs from a serving of pumpkin puree. Vitamin E keeps your immune system working properly and also protects your cells from damage that can lead to certain types of disease, such as cancer.

Healthy Chocolate Chip Pumpkin Muffins

These kid-friendly (and mother approved!) muffins make a healthy grab-n-go brekfast or snack! They are packed with healthy ingredients and sweeteded with natual ingredients.

  • 2 muffins tins

Ingredients
  

  • 4 eggs
  • 1 15 oz can pumpkin puree
  • 1 cup natural/unsweetened applesauce
  • 1/2 cup coconut oil – melted
  • 1/2 cup pure maple syrup
  • 1/2 cup coconut sugar or brown sugar
  • 2 1/2 cup whole wheat flour
  • 1/2 cup flaxseed
  • 2 tsp baking soda
  • 1 tsp bakig powder
  • 1 Tbsp pumpkin pie spice
  • 1 tsp salt
  • 1 1/2 cup chocolate chips

Instructions
 

  • Preheat oven to 400 degrees. Grease two muffin pans or use paper liners.
  • Beat eggs and mix with pumpkin, applesauce, maple syrup, sugar and oil in a large bowl.
  • Mix flour, baking soda, baking powder, salt, and pumpkin pie spice in a separate bowl.
  • Mix wet and dry ingredients together and then fold in chocolate chips.
  • Fill muffin two muffin tins with batter and bake for 15-17 minutes. Let them cool and enjoy!
