Herb-Garlic Goat Cheese Bruschetta

Ok, ladies…. I’ve FINALLY gotten my act together and put this herb-garlic goat cheese bruschetta recipe together in a blog post! In a perfect world, I would’ve gotten this recipe posted about a month ago, but better late than never, right?!

I know we all still have plenty of fresh tomatoes and basil coming out of our gardens, so this herb-garlic goat cheese bruschetta is the perfect way to use them up! These ingredients just scream summer to me. You just can’t go wrong with fresh garden tomatoes, basic and garlic. And you all know I am a big goat cheese lover!

Buuuuut, if you are not a goat cheese fan (I know not everyone is), just use all cream cheese! So simple!

ok, so just keeping it real, I make this all the time and I do not measure a darn thing. I made it a few weeks ago (when I took these pictures) and did my best to figure out measurements, but in all reality, it’s pretty hard to mess this one up.

In short, here is how it’s done. You mix up the cheese spread, mix up the tomato/basil topping, toast some some bread, top with all the goodness and you are ready to rock! I actually mix up both the cheese and the tomato/basil topping and keep them in containers in the refrigerator so I can make this for a quick lunch during the week.

Herb-Garlic Goat Cheese Bruschetta

Ingredients
  

For the cheese spread

  • 4 oz Cream Cheese
  • 4 oz Goat Cheese
  • 2 Tbsp Half & Half
  • 1 tsp Minced Garlic
  • 2 Tbsp Fresh Chives thinly sliced
  • 1/4 tsp Dried Thyme (or 1/2 tsp fresh thyme leaves – chopped)
  • S+P to taste

For the Tomato Basil Topping

  • 2 cups Cherry Tomatoes chopped
  • 3 Tbsp Fresh Basil chopped
  • 2 Tbsp Olive Oil
  • 1 Tbsp Balsamic Vinegar
  • 1/2 tsp Salt

Other:

  • 4 slices Sourdough Bread or french baguette
  • olive oil

Instructions
 

  • Preheat your oven to 400°.
  • Mix together all ingredients for the cheese spread – set aside.
  • Mix together all ingredients for the tomato topping – set aside.
  • Brush bread on both sides lightly with oil and place on a large baking sheet. Toast bread in oven until golden, 10 to 15 minutes, turning halfway through.
  • Let bread cool for 5 minutes, then spread ¼ of the cheese mixture on each of your 4 pieces of toasted bread.
  • Spoon tomato mixture on top and enjoy!

Tips/Tricks:

  • Lazy girl tip: Spray your bread with cooking spray ( or avocado oil spray) and toast in your toaster or toaster oven.
  • Try adding avocado if you are feeling it! 🙂
