Mini Orange Fruit Pizzas

These mini orange fruit pizzas have been a tradition in my family for years. For as long as I can remember, we have always made a fruit pizza or minis for our New Years Eve part. I haven’t always made them quite like this though. I remember specifically buying the big roll of sugar cookie dough, spreading it out, and make a huge sugar cookie. Then, I would write the year on it with fruit.

It was only a few years ago, when I became gluten sensitive that I started using this gluten free shortbread cookie recipe for my mini fruit pizzas. The dough doesn’t bake as well in one large piece, so I ended up making them small. After this, I realized that I preferred them small.

Not only are they a great appetizer for New Years, they are also great for birthday parties, wedding showers, weddings, etc. I served them at my sister-in-law’s bridal shower a few years ago and they were a hit. Everyone loved them!

It wasn’t until recently, however, that I started adding the orange twist. I love anything orange and I wondered what adding orange to the frosting might do for the flavor. Katie was over and I decided to give it a shot. We both loved it. The orange juice and the zest in the frosting make the cookie. Mini Orange Fruit Pizzas

Prep Time 20 minutes
Cook Time 15 minutes

Ingredients
  

  • 2 dozen sugar/shortbread cookies (I make gf shortbread cookies, but use whatever you'd like.)
  • 3/4 block cream cheese
  • 1 1/2 cups powdered sugar (add more if you'd like sweeter)
  • 1 tsp. vanilla
  • 3 Tbsp. orange juice
  • zest of 1 orange (split in half)
  • fresh fruit for topping (berries, mandarine oranges, kiwi, etc.)

Instructions
 

  • Bake and prepare the cookies according to the recipe or package. Cut them into your favorite shape or keep them simple (I use circles).
  • While the cookies are baking, start preparing the frosting.
  • In a mixing bowl, combine the cream cheese, powdered sugar, vanilla, orange juice and half of the zest.
  • Spread on the top of the cookies and top with a few pieces of your favorite fruit.
  • Add the remaining zest to add color!
