Sausage and Veggie Pasta

I have been making a version of this Sausage and Veggie Pasta for some time now and wanted to finally share it! I recently just started adding in my favorite dairy free Boursin cheese which I usually get from Trader Joe’s, but heard it’s now also available at Costco! So exciting! And I love how it makes the pasta creamy.  

But let’s get into the recipe, shall we? One thing I love about this recipe is that it calls for 4 cups of veggies. You can literally use anything you have on hand. My favorites are peppers, asparagus, broccoli, zucchini, and tomatoes, but feel free to add in whatever you like! This specific time, I added peppers and broccoli to use up what was in my fridge.

I also added my favorite garlic chicken sausage from Trader Joes, but you can find good options for chicken sausage at almost every grocery store! An Italian or spicy one would be go really well with this recipe.

Modifications for Sausage and Veggie Pasta

You probably know by now that we are a mostly gluten and dairy free household, so I’ve always got a good swap for those of you who are too! If you aren’t, feel free to use your favorite pasta and chive & herb cream cheese! But for those of you who need something gluten free and dairy free, I’ve got you!  

There are so many good gluten free pasta options these days, any will do! Whether you want something with brown rice pasta or with chickpea pasta for low carb, anything will work! For the dairy free cream cheese, I used the Boursin Dairy Free Garlic and Herbs cheese spread! I add about half the container and it really adds a good flavor and creaminess to the pasta. Feel free to skip this if you can’t find it or don’t like it!

Sausage + Veggie Pasta

Sausage and Veggie Pasta

Quick and easy pasta dish with your favorite sausage and vegetables. Easily made to be gluten and dairy free!

Ingredients
  

  • 1 package chicken sausages cut into thin rounds
  • 4 cups any veggies you have or like chopped
  • 2 handfuls spinach chopped
  • 1 package pasta of choice we use gluten free brown rice pasta
  • 1/2 container chive and herb cream cheese we use dairy free Boursin
  • 1 jar pasta sauce
  • 2-3 tbsp oil
  • 1 tsp salt
  • 1 tsp garlic powder

Instructions
 

  • Start by boiling water and cooking pasta according to package
  • Heat oil in a large skillet/pan over medium high.
  •  Add in chopped veggies, chicken sausage, salt and garlic powder.
  • Cover and cook until veggies are soft and slightly golden brown.
  • Add in cream cheese and mix. 
  • Drain pasta and add to veggie/sausage mixture.
  • Add jar of pasta sauce and mix to combine.
  • Add spinach and stir until wilted.
  • Serve and top with parmesan or other cheese of choice! 
  • Enjoy!
