Summer Broccoli Salad

I can’t remember a time without my mom’s Summer Broccoli Salad. It’s one of those recipes that I asked for (and let’s be honest – I still do ask for) when I came home from college. You know, how you actually appreciate your parent’s cooking once you’ve eaten dining hall food for a year. Anyone else?

It’s a recipe that my daughters love too. And my favorite part is that it’s full of nutrients. Check out this article on the benefits of eating broccoli. My girls don’t love raw broccoli, but put a bowl of this in front of them and it disappears. Our summer cookouts aren’t complete with out it.

As I sit and think about summer, I wonder what this summer is going to look like. How are you feeling about slowing getting back into life? I’m not sure life will be back to “normal” anytime soon. Our family and friend get togethers will look different, but this recipe for summer broccoli salad would make a great addition to your cookout!

A couple of tips before I share the recipe. Make sure you chop everything pretty small. I think it tastes better with smaller pieces of broccoli and onion. Lastly, if you mix in the dressing and it doesn’t seem to coat the broccoli well, you can mix up another half batch and add that too.

Summer Broccoli Salad

This Summer Broccoli Salad has been a favorite of mine for as long as I can remember. My mom made it all the time growing up and I always loved it!
Prep Time 15 minutes
Course Salad, Side Dish

Ingredients
  

  • 1 medium bunch of broccoli (finely chopped)
  • 1/4 cup red onion (finely chopped)
  • 1/2 cup sharp cheddar cheese (finely grated/shredded)
  • 1/4 cup bacon crumbles
  • 1/2 cup mayo
  • 1 tsp. apple cider vinegar
  • 1-2 Tbsp. sugar (depending on your preference)

Instructions
 

  • In a medium sized bowl, mix together the broccoli, onion, cheese and some of the bacon. (Save some bacon for later to use as topping.)
  • In a smaller bowl, whisk together the mayo, apple cider vinegar and sugar until the sugar has combined.
  • Pour the mayo mixture over the broccoi mixture and stir to combine.
  • Allow to sit in the refrigerator for an hour or so before serving and then add the remaining bacon to the top.
  • Enjoy!
