No Bake Energy Bites

Ingredients
  

  • 1 cup oats
  • 1 cup shredded unsweetened coconut
  • 1/2 cup ground flaxseed
  • 1/2 cup natural peanut butter
  • 1/3 cup honey
  • 1 tsp vanilla

Instructions
 

  • Mix all ingredients together - by hand in a bowl, using a stand mixer, or a hand mixer (whatever works)
  • Make into balls by hand or using a cookie scoop. Place balls on a baking sheet lined with parchment or wax paper. Freeze for an hour or so.
  • After they are frozen, transfer them to a ziplock bag or tupperware container and keep them in the freezer. Take them out about 10 minutes before you serve them or zap in the microwave for 15 seconds.
