Asian Lettuce Cups

These are the perfect weeknight dinner. They are quick and delicious!

Ingredients
  

  • 1 lb. ground turkey/chicken
  • 1 cup chopped cabbage (could use water chesnuts)
  • 1 chopped red pepper
  • 1 chopped shallot
  • 2 tsp minced garlic
  • 2-3 Tbsp oil
  • 1 head of butter lettuce

Sauce

  • 1/2 cup coconut aminos
  • 1 in freshly grated ginger (about 1 Tbsp.)
  • 1 Tbsp rice vinegar
  • 1 Tbsp arrowroot or corn starch
  • 2 tsp red pepper flakes (optional)

Instructions
 

  • Start by sauteeing the oil and garlic over a medium high heat in a large pan.
  • After a minute or two, add in the red pepper, shallot, and cabbage. Saute for about 5 minutes, or until soft.
  • Add in the ground turkey and cook fully!
  • While the meat is cooking, whisk all the ingredients together to make the sauce.
  • Once the meat is done, add in the sauce and turn to high heat. This will help the arrowroot thicken the sauce.
  • Once bubbling, turn heat down and stir to combine.
  • Serve in lettuce cups and enjoy!
