Easy Sheet Pan Nachos

Ok, I’m honestly not sure these Easy Sheet Pan Nachos need a recipe because they are SO easy, but we wanted a way to save the recipe.  Plus, if it’s on our site, you can search it, pin it and remember how amazing they are.

I remember making sheet pan nachos for the first time a few years ago.  Nachos weren’t something that I considered “healthy” or a good option for dinner but after some tweaking and trying it once, my family and I were hooked. 

Like most things we post here on Everyday M&K, this recipe is incredibly easy.  It takes no time to whip up. In this specific recipe, I use rotisserie chicken because there is practically no prep involved.  I pull it apart and that’s it. I love the rotisserie chicken from Metcalfes, but you can find them pretty much anywhere! Except Aldi.. I wish Aldi had rotisserie chicken.

It’s also easy to modify and make just what your family likes.  If you don’t like chicken, make taco meat. If you don’t eat meat, add more beans.  You get it! Just add in what you love and take off what you don’t like. One thing that we love to add when we have it is zucchini.  I chop up a raw zucchini in small cubes and top the nachos with it before baking. It’s a great way to get in an extra veggie. 

Speaking of veggies, these nachos can be as loaded with veggies as you want!  My recipe has tomatoes, onions and loads of cilantro, but you could easily add peppers, lettuce, avocado, black olives, etc.  There are so many good options!

Easy Sheet Pan Nachos

These make the perfect, quick family dinner or appetizer when you have your friends over!

Ingredients
  

  • 1 bag tortilla chips (I used about 3/4 of the bag)
  • 1-2 cups rotisserie chicken (cut into cubes)
  • 1 cup cheese (I like a mixture of cheddar and monterrey jack)
  • 1/2 cup black beans (rinsed and drained)
  • 1/2 cup tomatoes (chopped)
  • 1/4 cup red onion (diced)
  • 1/4 cup cilantro (chopped)
  • limes (optional)
  • sour cream (optional)
  • salsa (optional)
  • avocado (optional)

Instructions
 

  • Preheat the oven to 350 degrees.
  • On a pan lined with parchment paper, layer the chips.
  • Top with cheese, chicken, and beans and put in the oven.
  • Bake for about 10-15 minutes or until cheese is melted.
  • Top with tomatoes, salsa, sour cream, avocado or anything else you enjoy!
