Chicken Enchilada Lasagna

This Chicken Enchilada Lasagna is my solution when you want enchiladas but don’t feel like rolling them up! Rolling up enchiladas takes time and energy I often don’t have during the week. One night, a few weeks ago, I had planned on making enchiladas and decided to just make them casserole or lasagna style! It’s so much easier and takes less time to make!

We have our traditional Enchiladas Verdes recipe on the blog, and I wanted this to be similar, but with it’s own spin. So I decided to use grilled chicken and corn to give it a better, more robust flavor that is perfect for summer. You can plan ahead and grill them over the weekend too, so everything is ready and easy to assemble during the week.

Chicken Enchilada Lasagna Ingredients

Grilled Chicken

Like I said, I think the flavor of grilled chicken is the best in this recipe, but you could also absolutely use a rotisserie chicken or baked chicken as well! Brett grilled 2 chicken breasts and seasoned them with a little oil, and then uses salt, pepper, and garlic powder liberally!

Cheese

I use a dairy free cheese, but any cheese you enjoy would be good! I think pepper jack or a monterrey jack would be especially good in this recipe!

Tortillas

I use corn tortillas because we are gluten free, but I think flour tortillas would work well too! Either way, cutting them in half makes it easy to layer them in the pan!

Corn

Like I said earlier, I think grilled corn is the way to go, but I know it’s an extra step and corn isn’t always available. If it’s summer and you can grill your corn, that’s what I would do! Trader Joes also sells frozen bags of toasted corn which would work well too! Ohh and they have this, which would be so good!

Green Salsa & Green Chilis

These ingredients give the recipe its flavor! This is where you can play around with the amount of spice. Some green salsas are mild, and some are not! Find one you love and use that!

Chicken Enchilada Lasagna

Ingredients
  

  • 2 chicken breasts (grilled and chopped)
  • 1 pkg tortillas of choice (cut in half)
  • 2 jars salsa verde
  • 1 7 oz can green chiles
  • 1 bag frozen corn (or 2 cups grilled corn)
  • 1 bag cheese of choice
  • 1 avocado (sliced)
  • 1 bunch cilantro (chopped)

Instructions
 

  • Preheat the oven to 350 degrees.
  • Start by layering some salsa on the bottom of the pan.
  • Next layer in 8 or so half tortillas to form a layer.
  • After that, layer in half of the grilled chicken, corn, cheese and green chiles.
  • Top with half the green salsa.
  • Repeat, using the rest of the ingredients. Save a little cheese to sprinkle on the top.
  • Cover with foil and bake at 350 for 20-30 minutes.
  • Top with cilantro, avocado, and sour cream and serve with rice and your favorite salad!
