I love a salad in summer and this Cobb Salad hits the spot every time. Salads can be hit or miss in my house, but this one was a big hit because of the combined flavors and textures! Bacon never hurts either, right?

It’s the perfect time for a big salad if your garden is bursting like ours is! Grab the cherry tomatoes, fresh herbs, and get to work! I love how a Cobb Salad can really just be a few key ingredients and then you can kind of throw in whatever else you want to use up. Those are my favorite kind of meals.
Start with a lettuce base! I love crispy romaine, but feel free to toss in the half container of mixed greens as well. Then, we add grilled chicken, crispy bacon (I always bake make at 400 degrees), grilled corn (more on this in a minute), hard boiled eggs, tomatoes, avocado, and lots of fresh dill!
Back to the corn.
If it’s summer and Brett is around to grill the corn, we always throw it on the grill. We spray it with (avocado) oil, season it with salt and pepper, and then throw it on the grill until each side is done (slightly blackened), rotating regularly. For whatever reason, fresh, grilled corn is superior.. but any corn will work for this salad! One quick tip is to grill the chicken and corn ahead of time if you’re hoping to whip this up quickly on a weeknight. Or honestly, rotisserie chicken and frozen corn work too!!


And lastly, let’s chat about the dressing before I get to the recipe! A traditional Cobb Salad calls for a vinaigrette, but I wanted to make a homemade (dairy free) ranch since I had all of the dill! Dill is right up there for me when it comes to my favorite herbs. Basil and cilantro are pretty great too though. So, feel free to use any dressing you’d like. Almost anything should work and again, use what you have on hand or whatever is easier! Here are some of our other easy salad recipes if you’re looking for other ideas!

Cobb Salad
Ingredients
- 2-3 heads of romaine lettuce chopped
- 2 chicken breasts grilled and chopped
- 1 pkg cooked bacon chopped
- 3 hardboiled eggs chopped
- 1 avocado diced
- 2 ears grilled corn cut off the cob
- 1/2 cup cherry tomatoes quartered
- 2 Tbsp fresh dill
DF Ranch Dressing
- 1 cup mayo
- 2 tsp lemon juice
- 1 tsp vinegar apple cider or white
- 1/2 tsp dijon mustard
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 2 Tbsp fresh chopped dill (or 2 tsp dried dill)
- water to thin
Instructions
- Start by adding the lettuce, chicken, bacon, eggs, avocado, corn and tomatoes to a large bowl.
- Next make up the dressing by adding all the ingredients to a bowl and whisk.
- You can add a splash of water to thin the dressing out if needed! Continue until you get your desired consistency.
- Top dressing and toss all of the ingredients together. ENJOY!
