This Crockpot Unstuffed Peppers recipe is one of my mom’s recipes! She made it for us growing up and then would occasionally make it for us currently and my girls started to ask for it. Some of my favorite recipes are from my mom or Nana – like the Chicken and Wild Rice Soup or the Pumpkin Yum Yum bars which we make every Thanksgiving!

So I got her recipe and it has been in our rotation lately. We all love it and the best part is that it’s so easy! It takes 15-20 minutes or so of prep in the morning and you’re set for later on.

I always serve it over potatoes, but you could eat it over noodles or rice if that’s what you prefer. You can also stuff the peppers, but I like to just chop them up because they’re easier to eat! Also, feel free to play around with the seasoning a bit, but I really like to use the Kinders seasoning because it’s everything all in one. One day, maybe Kinders will sponsor us, since I use their spices in almost every recipe! One can hope, right?!

Crockpot Unstuffed Peppers
Equipment
- 1 Crockpot
Ingredients
- 1 lb ground beef
- 1/4 cup bread crumbs
- 1/3 cup cooked rice
- 1/4 cup diced onions
- 1 egg
- 2 tsp salt split in half, save half for later
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 large green peppers
- 1 liter about 33 oz of tomato juice
- 8-10 medium yellow potatoes
Instructions
- Start by adding the beef, bread crumbs, rice, onion, egg and seasoning to a bowl.
- With a spoon (or I think it’s easier with your hands), mix the mixture until combined.
- Using a medium/large cookie scoop, add the meatballs to the bottom of your crockpot.
- Next, chop the green peppers into bite size pieces and add to the crockpot.
- Pour the tomato juice over the top, add another tsp of salt and stir.
- Set the crockpot to low if you’re cooking all day. Or high if you only have 3-4 hours!
- Just before eating, peel and dice the potatoes into bite size pieces.
- Boil until soft.
- Top the potatoes with the pepper and meatball mixture and enjoy! Season more to taste!
