Equipment

  • 1 Crockpot

Ingredients

  • 1 lb ground beef
  • 1/4 cup bread crumbs
  • 1/3 cup cooked rice
  • 1/4 cup diced onions
  • 1 egg
  • 2 tsp salt split in half, save half for later
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 large green peppers
  • 1 liter about 33 oz of tomato juice
  • 8-10 medium yellow potatoes

Instructions

  • Start by adding the beef, bread crumbs, rice, onion, egg and seasoning to a bowl.
  • With a spoon (or I think it's easier with your hands), mix the mixture until combined.
  • Using a medium/large cookie scoop, add the meatballs to the bottom of your crockpot.
  • Next, chop the green peppers into bite size pieces and add to the crockpot.
  • Pour the tomato juice over the top, add another tsp of salt and stir.
  • Set the crockpot to low if you're cooking all day. Or high if you only have 3-4 hours!
  • Just before eating, peel and dice the potatoes into bite size pieces.
  • Boil until soft.
  • Top the potatoes with the pepper and meatball mixture and enjoy! Season more to taste!
