Start by adding the beef, bread crumbs, rice, onion, egg and seasoning to a bowl.
With a spoon (or I think it's easier with your hands), mix the mixture until combined.
Using a medium/large cookie scoop, add the meatballs to the bottom of your crockpot.
Next, chop the green peppers into bite size pieces and add to the crockpot.
Pour the tomato juice over the top, add another tsp of salt and stir.
Set the crockpot to low if you're cooking all day. Or high if you only have 3-4 hours!
Just before eating, peel and dice the potatoes into bite size pieces.
Boil until soft.
Top the potatoes with the pepper and meatball mixture and enjoy! Season more to taste!
