Instant Pot Spicy Gouda Mac and Cheese

This homemade Instant Pot Spicy Gouda Mac and Cheese takes less time than box mac and cheese. It’s delicious and is ready in under 10 minutes. We used a block of Roth gouda cheese to make it extra special and it tastes gourmet. The sweet gouda and hot sauce make the perfect combo.  Trust us on the hot sauce, it’s not super spicy, but gives it a little flare. You could also absolutely leave it out!  

Let’s chat about the pasta! 

I made this with a box of gluten free pasta, but you can use any pasta you like whether it’s regular, gluten free or higher protein pasta. The trick with cooking pasta in the Instant Pot is that you take the cook time on the box, divide in half and then subtract two. For example, if the cook time says 10 minutes. 
Take 10/2 = 5 and then subtract 2 which is 3.  So you would cook the pasta for 3 minutes in the Instant Pot! It’s so fast! 

Last thing I want to mention is the cheese. We used gouda in this recipe because it pairs so well with the spice of the hot sauce, but you could honestly use any cheese you have. It’s just 1.5 cups of any shredded cheese. Whatever you do, shred your own cheese for this, it’s so much better! I think a sharp cheddar or a cheddar and pepperjack combo would be so good as well! It is a great way to use up whatever cheese you have left over in your fridge! 


This Instant Pot Spicy Gouda Mac and Cheese would pair well with grilled chicken and some steamed broccoli or any other veggie! It would be so easy to make for game day or when you’re having company over. Whatever you make it for, it will for sure be a crowd pleaser!

Ingredients
  

  • 12 oz pasta
  • 2.5 cups broth chicken
  • 1 tbsp hot sauce optional
  • 1 tbsp butter
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • ½ TSP onion powder
  • 1 ½ cups (or block) Roth cheese gouda
  • 1 cup milk

Instructions
 

  • Add pasta, broth, hot sauce, butter and seasoning to the Instant pot and mix to combine.  
  • Cook time will vary depending on pasta. The rule of thumb for Instant Pot pasta is take the cook time, cut in half and subtract 2.
  • So if the cook time is 8 minutes on the box, cut in half would be 4. And then subtract 2. Total cook time would equal 2. 
  • Release pressure and uncover.  
  • Add in 1 cup of milk and cheese and stir to combine.
  • Top with additional cheese, extra hot sauce, and a little parsley!
  • Enjoy!
