Loaded Roasted BBQ Potatoes

We had some neighbors over this past weekend for Memorial Day and I made these Loaded Roasted BBQ Potatoes to test out.  I like to try recipes and have people give me their feedback before putting them on the blog.  And they were a huge hit!  Everyone gave me two thumbs up, so I’m passing the recipe along to you all!  

We all likely have summer get-togethers planned with family and friends, and feeding large groups of people isn’t always easy.  It’s actually a pain sometimes!  Right?!  Well throw some meat on the grill and make these potatoes to go with them!  I love a pan of smashed potatoes, but these are easier and less steps.  And the toppings take them to the next level! 

I love a loaded baked potato, but sometimes it feels like too much potato!  That’s what makes these perfect.  It’s small bites of potato, crispy bacon, BBQ aioli and green onion in every bite!  The BBQ aioli is new for me.  I’ve been making versions of aioli to go on my potatoes and sheet pan meals for years, and decided with summer coming and BBQ season in full swing, I’d make it with BBQ!

I started with my base of mayo, lemon juice, and Kinders (salt, pepper, garlic) seasoning and then added my favorite Kinders BBQ and the flavor was 10/10.  This recipe is also naturally gluten and dairy free for those in the family who need that! The recipe below should feed 6-8 people, so double or triple for larger groups!

Loaded Roasted Potatoes

Easy and delicious potatoes perfect for outings and weeknight dinners

Cook Time 30 minutes

Ingredients
  

  • 3 lbs gold potatoes
  • 3 Tbsp oil
  • 1 Tbsp Kinders seasoning mix of salt, pepper, garlic
  • 1 Tbsp Italian seasoning
  • 1/3 cup bacon bits
  • 1 bunch green onion chopped

Aioli:

  • 1/2 cup mayo
  • 1 Tbsp lemon juice
  • 2 Tbsp BBQ more to taste
  • 1 tsp Kinders seasoning salt, pepper, garlic

Instructions
 

  • Start by preheating the oven to 400.
  • Dice the potatoes into 3/4-1 in cubes.
  • Add potatoes, oil and seasoning to a bowl and toss.
  • Spread on a pan with parchment paper.
  • I like to spray with a little more oil and top with more seasoning.
  • Bake for 20-30 minutes or until golden!
  • While it’s baking, make the aioli. by mixing together the mayo, lemon juice, BBQ and seasoning and then chop the green onion.
  • Once the potatoes are done, top with aioli and onion and ENJOY!
