Chicken Taco Quinoa Skillet
I have been making a version of this Chicken Taco Quinoa Skillet for years! I’ve modified it quite a bit and finally landed on a recipe that my family loves. My favorite part about the recipe is how quickly it comes together.

- 2 Tbsp oil
- 1/2 onion diced - about a cup
- 1 Tbsp minced garlic
- 1 lb ground chicken
- 1/2 tsp salt, pepper + garlic
- 1 diced pepper
- 1 can mild rotel tomatoes & green chilis
- 1/2 cup rinsed quinoa
- 1 can rinsed black beans
- 1 cup fire roasted corn
- 3 Tbsp or 1 packet taco seasoning
- 1 cup water
Optional Toppings
- cheese
- cilantro
- avocado
- lettuce
- chips
- tortillas
Start by heating oil in a large pot or pan over medium high heat.
Add the garlic and onion and cook for about 2-3 minutes or until soft.
Add the meat and spices and combine.
Once the meat is mostly cooked through add the remaining ingredients and mix.
Cover and reduce heat to medium, stirring every 5 minutes or so.
Cook covered for about 20 minutes or until the quinoa is cooked through and everything has combined!
Top with cheese and other toppings and serve with chips, on a tortilla or over greens! ENJOY!
