Sweet Chili Thai Chicken Bowls

Featuring Jones Dairy Farm chicken meatballs which are my absolute favorite fast and delicious protein

Ingredients
  

  • 2 cups jasmine or basmati rice
  • 4 cups chicken broth
  • 1 tsp salt
  • 1 bag Jones Dairy Farm chicken meatballs
  • 1 cup sweet chili sauce about 1/2 bottle

Toppings: 

  • diced cucumber
  • shredded carrots
  • diced red onion
  • chopped green onion
  • avocado
  • cilantro
  • lime juice

Sriracha Aioli:

  • 1/2 cup mayo
  • 1.5 T. sriracha or more depending on preference
  • 1 tsp. honey
  • 1-2 Tbsp lime juice

Instructions
 

  • Start by preparing the rice. Add the rice, chicken broth, and salt to a pot. Bring to a boil and then cover and reduce temperature to medium. Cook about 10-15 or until rice is tender.
  • Cook the Jones Dairy Farm chicken meatballs according to the package. I add 2 Tbsp. of water and cook on the stove until browned.
  • While the rice and meatballs are cooking, prep the veggies you'd like to top it with.
  • Mix all of the ingredients for the aioli together in a bowl.
  • Once everything is done, layer everything on top of the rice! Enjoy!
