Gluten Free Peach and Blueberry Crisp

While my girls have been eating three to four a day, I didn’t want to let any go to waste, so I made a Gluten Free Peach and Blueberry Crisp! Fruit crisps are one of my favorite summer desserts, and I especially love combining fruits to make the best combinations!

Let’s Chat Peach and Blueberry Crisp

Since blueberries are also in season right now, I knew they would be the perfect addition to this crisp. I made this recipe gluten-free by using King Arthur’s Gluten-Free Flour, which worked beautifully and gave the topping a delicious buttery texture. If you don’t need it to be gluten-free, regular all-purpose flour works just as well. I also used dairy-free butter, but regular butter or even coconut oil are great substitutes depending on your dietary preferences.

One of the things I love most about fruit crisps is how versatile and easy they are to serve. They’re delicious warm right out of the oven, especially with a scoop of vanilla ice cream or whipped cream, but they’re just as good the next day. Crisps are one of my favorite desserts to bring to gatherings because they’re easy to transport, feed a crowd, and always disappear quickly!

In fact, I brought this Peach and Blueberry Crisp to a dinner with friends last night, and it was the perfect dessert to share. Everyone loved it, and several people asked for the recipe before the evening was over. There’s nothing better than sharing a homemade dessert made with fresh, seasonal fruit.

Gluten Free Peach and Blueberry Crisp

Fruit crisps are one of my favorite summer desserts, and I especially love combining fruits to make the best combinations! This easy and delicious recipe will be a fan favorite!

Cook Time 30 minutes

Ingredients
  

  • 5-6 peaches peeled and diced
  • 1 cup blueberries fresh or frozen
  • 1 stick butter
  • 1 cup oats
  • 1/2 cup GF flour
  • 1/4 cup brown sugar
  • 1 tsp vanilla
  • 1/2 tsp salt

Instructions
 

  • Start by preheating the oven to 350 degrees.
  • Spray the bottom of a pie pan or 8 x 8 baking pan.
  • Add in the peaches and blueberries.
  • Melt the butter.
  • Add the remaining ingredients (oats, flour, brown sugar, vanilla and salt) to the melted butter.
  • Mix to combine and pour the topping over the fruit.
  • Bake at 350 degrees for 25-30 minutes or until bubbling.
  • Enjoy with ice cream or whipped cream
